The history of MOPLACO begins with its founding in 1971 by Giannis Georgalis. Giannis Georgalis’ love for coffee and Ethiopia later inspired his daughter Eleanna to continue the family tradition in coffee. The coffee beans after harvest are washed and the first separation of the best is done. They are then placed in stainless steel containers and sealed to initiate fermentation in a low oxygen environment lasting at least 70 hours. This gives a more intense and fruity taste to the coffee. The coffee was then taken out of the containers and dried on African beds for 15 days. The sorting and selection of the best fruits is done daily until the day the batch will come to MOKKA.
